Spicy and Smoky Baked Chickpeas

SNACK TIME!!  It doesn’t get any easier or tastier than these.  A little crunch, a little heat, a lot healthy.  Enough said.

Spicy and Smoky Baked Chickpeas

Serves 6

Prep: 10 mins

Cook: 35 mins

Total: 45 mins

Ingredients:

  • 1 (29-ounce) can chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 1 tsp Spanish smoked paprika
  • 1 tsp ground cumin
  • pinch cayenne pepper, or to taste
  • pinch Volcano Dust, or to taste (optional)
  • 1/8 tsp kosher salt
  • 1/8 tsp freshly cracked black pepper to taste

Directions:

  1. Preheat oven to 400° F
  2. Drain and Rinse the chickpeas.  Dry on two paper towels or a clean hand towel.
  3. In a large bowl combine oil, paprika, cumin, cayenne pepper, Volcano Dust, salt, and pepper.  Add chickpeas and gently toss to coat evenly.
  4. Transfer the chickpeas to a parchment-lined baking sheet and spread them out in a single layer.  Place in oven and bake for 15 minutes.  Remove from oven and shake the tray to toss.  Return to oven and bake for an extra 15-20 minutes, or until golden and crispy.  Transfer to a bowl for serving.  Best when eaten immediately.

    Any idea what the shelf life would be or how best to store them? These sound like they might be a good option for making on Sunday afternoon to bring to work for snacks during the week.

    • Hi Ron! Unfortunately, this yummy snack is best eaten the same day you make them. When I have leftovers, they do get soft. I personally still like them that way, but some people may not. You could throw the leftovers back in the oven to re-crisp them if desired. Do you like roasted almonds for a healthy snack? Ever tried roasting your own at home? That’s my husband’s favorite snack to eat at work… just put raw almonds on a baking sheet and bake for 10-15 minutes and they’re just so good!! He eats them with babybel cheese, triscuits, and a banana for a well balanced afternoon snack. (Sorry for the long answer.. I just love giving snack ideas) :) :)

    Very easy and cheap to make, but, in my opinion, really awful as well. Kind of like eating cardboard. But, I enjoy trying new things and my son enjoyed trying them (although he did not like them either), so it was fun to try something new. :-)

    • Awww, I’m so sorry you and your son didn’t care for them. They’re one of my favorite crunchy snacks. I wonder if you dried them thoroughly and ate them immediately?

        Yes, I dried them plenty and yep, we ate them as soon as they were cool enough to eat. He liked them more than I did, but at the end of the day they still tasted like a bean, in my opinion, and I hate beans.

        • Sorry you didn’t like them, but I wouldn’t recommend them if you don’t like beans. It seems like Claire Robinson’s baked chickpeas are getting mixed reviews. I personally love them, but I do love beans myself. I think she’s had good and bad reviews on them, so it’s up to you guys to make up your mind. It’s not a huge cost to try it out. I love hearing opinions about them either way! :)
