‘Garlicky’ Hummus

This Mediterranean dip is made with chickpeas, also known as garbanzo beans, and if you love garlic you’ll love this… You can also use this basic recipe and get creative with the flavors.  I happen to like a roasted bell pepper hummus, for example.  Either way, I love whipping up things like this for a snack for myself, or a crowd… easy, delicious, and nutritious!

‘Garlicky’ Hummus

Ingredients
  • 8 oz dried chickpeas, uncooked
  • 4 cloves garlic, peeled
  • ½ cup tahini
  • ¼ cup freshly squeezed lemon juice
  • ¼-1/2 cup water
  • ½ tsp granulated garlic
  • ½ tsp salt
  • ¼ tsp cracked black pepper
  • 2 tbsp parsley for garnish, roughly chopped (optional)
  • cayenne pepper or Volcano Dust to taste (optional)

Instructions
  1. Cook chickpeas according to package directions. Place all ingredients in a food processor fitted with a metal blade. Process on high while adding a little water to get it moving, stopping once to scrape down sides of the bowl. Add as much water as needed and process until smooth, or until the desired consistency is reached.

Notes
Yield: 3 cups hummus Serving ideas: Whole wheat pita bread, blue or white corn tortilla chips, or assorted veggies.
